Love (those) handles
I love it when I get to sharpen Miyabi knives.
Here are two from the 5000FCD series; the Shotoh paring and the Gyutoh chefs knife. They sharpen up amazingly and I’m never disappointed with the results. The paper test is smooth as silk.
The handles are made from Pakkawood, an engineered wood/plastic composite material. It’s a plywood veneer basically. The wood can be dyed to match the appearance of any natural wood color.
The best part about this material is that it is mostly waterproof and won’t warp or split when exposed to water, making it a great choice for kitchen knives.
The steel end cap and the decorative pin and ring are a nice touch too. They are pricey, but you’ll definitely get a quality kitchen knife that will last a long time and take a great edge.
