A nice variety

Not everyone has a perfect block of knives, all the same brand and style. It’s OK to have an eclectic assortment of knives. In fact, I prefer it!

Usually a rag tag bunch (like these), have great stories behind them and hold a lot of sentimental value for the customer. Plus they get used. A lot. Bring them all in for sharpening and give them new life.
